I’ve harvested the last of these guys today. They make a great addition to couscous salad.
I’ve been harvesting the beets little by little. Today I steamed a few and used the greens in a Beet Greens Pesto. They’re excellent. I definitely did not think to thin them, as I bought them already sprouted, but lesson learned for next time…
Transplanted. I’m so excited for homegrown beets. I don’t know anything about growing these, but they’re chilling in the veggie bed and should be happy until I finish reading my vegetable gardening book.
